CHARDONNAY

AREA OF PRODUCTION

 Moraine small hills south of lake Garda,
town of Cavriana, Loc. Campagnolo.


TYPE OF TERRAIN

 Moreine, sandy-pebbly, slightly calcareous.


HEIGHT (ABOVE SEA-LEVEL) s.l.m. : 150-180 m.


TRAINING SYSTEM

Spur cordon and Guyot.


GRAPEVINE AGE

40 years old, hectare yield 50-70 q.


VINE VARIETY

Chardonnay 100%


HARVEST

 Manual in crates the first week of september.


VINIFICATION

 Soft pressure of the whole grepes, fermentation in steel tank for 13-15 days at 14-16° temperature, decanting and refinement on fine sediment for 4 months, with periodic  batonage.


BOTTLING 

The sping following the grape harvest,
commercialization two months after refinement in bottle.

COLOUR

Straw-yellow with greenish reflexes.


AROMA

Intens and persistent with scents of apple and tropical fruits.


TASTE

Balanced, well structured, pleasantly harmonius, good sapidity and final persistence.

       ANALYTIC DATA

Alcohol contentl : 13 % vol.

Total Acidity : 6,0 – 6,2 g/l

pH : 3,22 – 3,26

Sugar residual : About 4 g/l

LUGANA

DOC

AREA OF PRODUCTION

 South of Lake Garda, in the area of origin.


TYPE OF TERRAIN

 Flat with terrain highly clayish calcareous.


HEIGHT (ABOVE SEA-LEVEL) s.l.m. : 80-90 m.


TRAINING SYSTEM

Double arch.


GRAPEVINE AGE

more or less 20 years old, hectare yield 125 q.


VINE VARIETY

Trebbiano di Lugana 100%


HARVEST

 Manual in crates in the second decade of september.


VINIFICATION

 Destemming grapes , soft pressure, fermentation in steel tank at 16° temperature. Decanting and refinement on fine sediment for 3-4 months, with periodic  batonage.


BOTTLING 

The spring following the grape harvest,
commercialization two months after refinement in bottle.

COLOUR

Bright straw-yellow with gold shades.


AROMA

Elegant, with floral and fruit notes and hint of citrus sensation. 


TASTE

Full and fresh, delicately mineral, with a sapid and dry end.

CABERNET MERLOT

AREA OF PRODUCTION

 Moraine small hills south of lake Garda,
town of Cavriana, Loc. Campagnolo.


TYPE OF TERRAIN

 Moreine, sandy-pebbly, slightly calcareous.


HEIGHT (ABOVE SEA-LEVEL) s.l.m. : 100-130 m.


TRAINING SYSTEM

Spur cordon and Guyot.


GRAPEVINE AGE

40 years old, hectare yield 70-80 q.


VINE VARIETY

Cabernet Franc 80% , Merlot 20%


HARVEST

 Manual in crates the mid september and mid october.


VINIFICATION

 Light drying in small crates for about 25 days of Merlot grapes and over-ripening of Cabernet Franc grapes. Fermentation with the skins for about 12-14 days, with frequent rack and return and manual wine-crushing. After the draining off follows the natural malolactic fermentation. Refinement of 6/8 months in second passage French oak barrels. .


BOTTLING 

In the following year of the harvest,
commercialization 6 months after refinement in bottle.

COLOUR

Bright ruby red.


AROMA

Intense with aroma from black fruits and pleasant vegetable scents. A smoky and spicy note is clearly perceived.


TASTE

Wide, finelly grassy, with soft and well aligned tannins.

With vibrant freshness and long persistence.
